Sweet Bread!

So you want to make banana nut bread?  Or blueberry bread?  Or pumpkin muffins?  Or any sweet bread for that matter?  Here’s the recipe.  This recipe will make any/all of the sweet breads/muffins you want with the very same base recipe.  That’s part of commercial cooking...making multipurpose recipes that can be transformed into a large variety of usable and DELICIOUS product.  Here you are my friends:


Makes 2 standard loaf pan breads or 30 muffins


1.5 C coconut flour

1.5 C honey

1.5 C grapeseed oil

18 eggs

1 ½ tsp salt

1 ½ tsp baking soda

Variations (endless):  

Banana Nut:  2 pureed bananas and 1 c chopped walnuts

Chocolate Chip:  1 c chocolate chips

Blueberry:  1 c frozen or fresh blueberries

Pumpkin:  ¾ c pumpkin puree, 2 tbsp cinnamon, 2 tsp nutmeg, 1 tsp ginger, 1 tsp clove


Pre-heat oven to 325.  

Mix all ingredients in large bowl (use a stand mixer with a whisk attachment if you have one)

Line loaf pans with parchment or muffin tins with baking cups

Fill loaf pan/muffin cups ¾ of the full.  Muffins take 20-25 minutes (until firm when touched).  Breads take 50-60 minutes.


These breads/muffins will absolutely stick to the liners.  I freeze the breads and then pull the parchment off.  You can get them off right out of the oven if you have a delicate hand.  I don’t worry too much about the muffins...they’re so delicious that I just nibble the leftover off of the liners.
